NPA Level 4 in Professional Cookery

The Introduction to Professional Cookery at SCQF level 4 is designed to equip learners with the skills and knowledge required to progress onto the National Certificate (NC) in Professional Cookery at SCQF level 5 or to seek employment in hospitality and catering industry.  On completion, learners will be able to make informed decisions on suitable progression routes that match their abilities, aspirations, and goals.

The course consists of four units: 

  • Food preparations techniques, an introduction
  • Food hygiene for the hospitality industry
  • Cookery processes. an introduction
  • Craft baking, an introduction

This course covers areas such as safe working practices, food preparation techniques, cookery processes, dish composition and balance, portion control and how to adapt dishes to meet nutritional requirements.

The course consists of four units:

  • Pastry
  • Food Hygiene for the hospitably industry

Hospitality - Customer Service Skills

The course covers the basics for anyone wishing to start work in a restaurant or looking to improve their existing skills.

The course will cover the following areas:

  • Clean and prepare a restaurant area and equipment for food and beverage service
  • Ensure the service area is prepared and welcoming for customers
  • Greet customers and take orders for food
  • Explain menu items and deal with dietary requirements
  • Serve customers with food and beverage as appropriate
  • Maintain tables and service area during service
  • Clear tables, service area food and equipment
  • Clean service equipment and area after service

Emphasis on customer service skills, allergens and appropriate hygiene.

The course will be run in the new training restaurant at the college with paying customers. Students on Professional Cookery courses will be preparing the food for service.

This course, which may be taken in college or online, is designed to provide all food handlers with knowledge and understanding of current food safety practices and legislation. It is a nationally recognised qualification in all sectors of the food and hospitality industries and helps to ensure safe hygienic practices
