NPA 4 in Bakery

The NPA in Bakery has been designed to equip candidates with the skills required for success in current and future employment within the bakery industry or for progression to further academic qualifications. This award is aimed at candidates who are interested in pursuing a career in the bakery and catering industries but do not necessarily have any prior experience. The National Progression Award in Bakery consists of four mandatory Units; three of the Units are at SCQF level 4 and one at SCQF level 5

  • Craft Baking: An Introduction
  • Bread Making: An Introduction
  • Cake Decoration: An Introduction
  • Pastry

Start Date: 26 April 2023 to 26 April 2023

Duration: 8 weeks 2 days per week

NC Professional Cookery Level 5 content cookery

NC Professional Cookery Level 5

Develop employability knowledge and practical skills for working in a professional kitchen, e.g. team working, food safety, food product knowledge, waste control, costings, food preparation, cookery, and presentation skills.

The following units will be studied:

  • Professional Cookery: Kitchen Operations
  • Food Hygiene for the Hospitality Industry
  • Stocks, Sauces, and Soups
  • Health and Safety in Hospitality

  • Barista skills

REHIS Elementary Food Hygiene at Barra campus

UHI Outer Hebrides in conjunction with Hebridean Hygiene Training are running a REHIS Elementary Food Hygiene course

  • Start Date:  Thursday 23rd March 2023 at the Barra Learning Centre 
  • Cost: £85 per person but discounts are available if more than one person from an organisation attends, the costs include course material, refreshments and exam certificate. 
  • Study Method: Face to face, one-day course running from 9-4.30 pm
