REHIS Elementary Food Hygiene

What is special about this course?

This course, which may be taken in college or online, is designed to provide all food handlers with knowledge and understanding of current food safety practices and legislation. It is a nationally recognised qualification in all sectors of the food and hospitality industries and helps to ensure safe hygienic practices.

Knowing how to prepare food in a safe hygienic way is very important, whether you work in the hospitality industry or simply help out at your local community group. This course is primarily for those who are currently employed or seeking employment in the hospitality/catering industry, whether professionally or on a voluntary basis. It is designed to give each student an in-depth understanding of safe, healthy food handling and preparation. On successful completion you will receive a nationally recognised qualification.

You will cover key aspects of food hygiene, focusing on a range of topics - from delivery from business premises to preparation and storage. You will also focus on personal hygiene, correct refrigeration temperatures, correct cooking temperatures and appropriate storage facilities.

Entry requirements

There are no formal entry requirements.

  • Bacteria and their characteristics
  • Personal hygiene and working habits
  • Food poisoning and its prevention
  • The working environment
  • Common food pests and their control
  • Cleaning practices
  • Food safety legislation
  • HACCP

How will I study my course?

  • Short course

A one-day short course taught at various UHI Outer Hebrides campuses.  

The course may also be delivered at an employer’s premises if required (subject to sufficient numbers).

The course may also be taken online (attendance is required for the exam).

The course is normally taught and assessed in one day.

The online study mode is flexible, but will be completed within an agreed time.
